ABDOOGH KHIAR and Masto khiar are excellent and very healthy foods for summer and hot season. Yogurt and cucumber have a cold nature, mint, walnuts, raisins have a warm nature. When we combine these ingredients, their coldness and heat are balanced together, and this is very beneficial for the body and health according to Iranian Traditional Medicine. This food is more useful for people with warm nature.

What is the difference between ABDOOGH KHIAR and Masto KHIAR? In ABDOOGH KHIAR, we add water and herbs, but in Masto khiar, water is not added, and most of the time, there are no herbs, but herbs can be added, it depends on the taste.

ABDOOGH KHIAR and masto khiar are eaten both as main dish and as side dishes. Masto khiar is like a salad that can be eaten with food. ABDOOGH KHIAR is eaten with other foods like a drink.

Abdogh khiar:
3 cucumbers
3 red radish
A cup of yogurt
Water a cup
Half a tablespoon of mint
Half a cup of chopped cucumber
Chopped walnuts one tablespoon
Half a teaspoon of salt
Raisins a tablespoon
chopped Mint/Chives/Tarragon/Basil/Cress 2 cup



We have seven cucumbers. Chop four cucumbers and slice three cucumbers
We have seven radishes, chop four radishes and slice three radishes
We pour a cup of yogurt in a bowl and then add a cup of water to it
Add half a cup of chopped cucumber, add half a tablespoon of dry mint
Add a tablespoon of chopped walnuts
In Iran, some herbs are eaten fresh with food, we call them Sabzi Khordan, these herbs include mint/chives/tarragon/basil/cress and radish.
Chop two cups of herbs and set aside
Add half a teaspoon of salt
We add a tablespoon of raisins and a cup of chopped herbs
And now to decorate the food, we use chopped and sliced cucumbers, chopped and sliced radishes, dried Damask rose , walnuts and herbs.
