✨ Ingredients: ✨
- 5 large eggs
- 1 cup cooked quinoa
- 1/2 cup chopped red bell pepper
- 1/2 cup shredded rainbow carrot
- 1 small onion chopped
- 1/4 cup scallions chopped
- 1 cup shredded sharp cheddar cheese
- 1/4 cup chopped parsley
- Salt to Taste
- 1 tsp red pepper flakes (optional)
- Preheat oven to 350F

✨ Instructions: ✨
- In bowl whisk eggs . Add onion ,quinoa, red bell pepper, carrot , cheddar cheese, scallion , salt and red pepper mix very well
- Spray some avocado oil in a muffin tin (12 count ) �
- Fill muffin tin with egg mixture and bake until eggs have puffed and are cooked through.
Serve warm, you can store this in airtight container for few days!
